1๏ธโฃ Slow Cook the Roast
- Season roast generously with salt & pepper.
- Heat olive oil in a skillet over high heat. Sear roast 2โ3 minutes per side for rich flavor.
- Transfer to slow cooker.
- Add onions, garlic, carrots, celery, thyme & rosemary.
- Pour in beef broth + Worcestershire sauce.
- Cover and cook:
โ Low: 8โ9 hours (fall-apart tender)
โ High: 4โ5 hours
2๏ธโฃ Make the Gravy
- Remove roast & veggies when done.
- Strain liquid into a saucepan.
- Bring to a simmer. Add the cornstarch slurry and whisk until thickened into a smooth gravy.
3๏ธโฃ Creamy Mashed Potatoes
- Boil potatoes in salted water ~15 minutes or until soft.
- Drain, then mash with butter, warm milk/cream, salt & pepper.
- Add cream cheese if you want them extra heavenly ๐โจ
