Creamy Chicken Vegetable Biscuit Cups

These are warm, cozy little baked cups made with flaky biscuits filled with creamy chicken and vegetables—perfect for an easy family dinner or snack.


Ingredients

  • 1 can refrigerated biscuit dough (or homemade biscuit dough)
  • 2 cups cooked chicken, shredded
  • 1 cup mixed vegetables (peas, carrots, corn, green beans)
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 1/2 cups milk
  • 1/2 cup chicken broth
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste
  • 1/2 cup shredded cheese (optional but delicious)
  • 1 egg (for brushing, optional)

Instructions

  1. Preheat oven to 180°C (350°F). Lightly grease a muffin tin.
  2. Flatten each biscuit and press into muffin cups, forming little shells.
  3. Bake biscuit shells for 6–8 minutes until slightly set.
  4. In a pan, melt butter over medium heat. Stir in flour and cook 1 minute.
  5. Slowly whisk in milk and chicken broth until smooth and thickened.
  6. Add garlic powder, onion powder, salt, and pepper.
  7. Stir in chicken, vegetables, and cheese (if using). Mix until creamy.
  8. Spoon filling into pre-baked biscuit cups.
  9. Bake again for 12–15 minutes until golden and bubbling.
  10. Let cool slightly before serving.
