🇭🇺 Hungarian Apple Pite (Almás Pite)

📝 Ingredients

Dough:

  • 300 g all-purpose flour
  • 150 g unsalted butter (cold, cubed)
  • 100 g sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp baking powder
  • Pinch of salt
  • Zest of 1 lemon

Apple Filling:

  • 1 kg apples (peeled & grated)
  • 100 g sugar (adjust to taste)
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 2–3 tbsp breadcrumbs (to absorb moisture)
  • Optional: raisins

For Finishing:

  • Powdered sugar (for dusting)
  • 1 egg (for brushing)


👩‍🍳 Instructions

1. Prepare the Dough

  1. In a bowl, mix flour, sugar, baking powder, salt, and lemon zest.
  2. Add cold butter and rub until crumbly.
  3. Add egg and egg yolk, then knead into a smooth dough.
  4. Divide into two equal parts, wrap, and chill for 30 minutes.

2. Prepare the Apple Filling

  1. Grate apples and squeeze out excess juice.
  2. Mix with sugar, cinnamon, vanilla, and raisins (if using).
  3. Stir in breadcrumbs to absorb moisture.

3. Assemble the Pie

  1. Preheat oven to 180°C (350°F).
  2. Roll out one dough portion and place in a greased baking pan.
  3. Sprinkle a little extra breadcrumbs on the base.
  4. Spread apple filling evenly.
  5. Roll out the second dough and place on top.
  6. Seal edges and prick the top with a fork.
  7. Brush with beaten egg.

4. Bake

  • Bake for 35–40 minutes until golden brown
  • Let cool completely before slicing
