🥩🍝 Marhapörkölt nokedlivel (Hungarian Beef Stew with Dumplings)

🥩 Ingredients (Marhapörkölt):

  • 1 kg beef (stew meat), cut into cubes
  • 2 large onions, finely chopped
  • 2 tbsp lard or oil
  • 2–3 tbsp Hungarian sweet paprika
  • 2 cloves garlic, minced
  • 1 tomato, chopped (or 2 tbsp tomato paste)
  • 1 green pepper, chopped (optional)
  • 400–600 ml water or beef broth (as needed)
  • Salt and black pepper to taste
  • 1 tsp caraway seeds (optional)

🍝 Ingredients (Nokedli):

  • 300 g all-purpose flour
  • 2 eggs
  • 150–180 ml water
  • 1 tsp salt

🔥 Instructions:

1. Make the Pörkölt:

  1. Heat lard or oil in a heavy pot.
  2. Add onions and cook slowly until golden and soft.
  3. Remove from heat and stir in paprika quickly.
  4. Add beef and mix well.
  5. Return to heat and lightly brown the meat.
  6. Add garlic, tomato, and green pepper.
  7. Pour in a small amount of broth or water.
  8. Cover and simmer for 1½–2½ hours until beef is tender.
  9. Add liquid as needed and season with salt and pepper.

2. Make the Nokedli:

  1. Mix flour, eggs, salt, and water into a thick sticky batter.
  2. Bring a large pot of salted water to a boil.
  3. Drop small pieces of batter into boiling water (spoon or nokedli grater).
  4. Cook until they float (2–4 minutes).
  5. Drain and set aside.
