1. Cook the Chicken:
In a large skillet, heat olive oil over medium heat.
Add the chicken pieces, season with salt and pepper, and cook for about 5-7 minutes until golden and cooked through.
Once the chicken is cooked, remove it from the pan and set aside.
In the same skillet, melt butter and add the minced garlic. Cook for about 1 minute, until fragrant.
Add lemon juice and zest, stirring to combine.
Return the chicken to the skillet, toss to coat in the lemon garlic butter, and cook for an additional 2 minutes. Garnish with fresh parsley if desired.
2. Prepare the Parmesan Linguine:
Cook linguine pasta according to package instructions until al dente. Drain, reserving some pasta water.
In the same pan, melt butter over medium heat. Add heavy cream, and bring it to a simmer.
Stir in the parmesan cheese, garlic powder, and season with salt and pepper. Stir until the sauce is smooth and creamy.
Add the cooked linguine to the pan and toss to coat in the creamy sauce. If the sauce is too thick, add a little pasta water to loosen it up.
3. Serve:
Plate the creamy parmesan linguine and top with the lemon garlic butter chicken bites.
Garnish with extra parmesan cheese and fresh parsley. Enjoy this satisfying meal!
