
Ingredients:
- 1 medium cauliflower, cut into florets
- 2 tbsp oil or butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, sliced
- 1 tsp Hungarian paprika
- 1/2 tsp black pepper
- Salt to taste
- 1 tsp dried parsley
- 1/2 tsp caraway seeds (optional)
- 6 cups vegetable or chicken broth
- 1 bay leaf
For the dumplings (nokedli):
- 1 cup flour
- 1 egg
- 1/3–1/2 cup water
- 1/2 tsp salt

Instructions:
- Heat oil in a pot and sauté onion until soft. Add garlic and cook briefly.
- Stir in paprika, then add carrot and cauliflower florets. Mix well.
- Pour in broth, add bay leaf, parsley, caraway seeds, salt, and pepper.
- Simmer for 15–20 minutes until vegetables are tender.
- Meanwhile, mix flour, egg, salt, and water to form a soft, sticky dough.
- Drop small spoonfuls of dough directly into the simmering soup.
- Cook for 3–4 minutes until dumplings float and are cooked through.
- Taste and adjust seasoning. Serve hot.
