Hungarian Stuffed Cabbage Rolls (Töltött Káposzta)

📝 Ingredients

For the Rolls:

  • 1 large head cabbage
  • 500 g ground pork (or pork & beef mix)
  • 100 g rice (uncooked)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 egg
  • 1 tsp paprika
  • Salt and pepper to taste

For the Sauce:

  • 2 tbsp oil
  • 1 onion (chopped)
  • 1 tbsp paprika
  • 400 g crushed tomatoes
  • 1 tbsp tomato paste
  • 500 ml water or broth
  • 150 g smoked sausage (sliced, optional)
  • Salt and pepper to taste

For Serving:

  • Sour cream

👩‍🍳 Instructions

1. Prepare the Cabbage

  1. Bring a large pot of water to a boil.
  2. Carefully remove cabbage leaves and blanch them for 2–3 minutes until soft.
  3. Trim thick stems to make rolling easier.

2. Make the Filling

  1. In a bowl, combine ground meat, rice, onion, garlic, egg, paprika, salt, and pepper.
  2. Mix until well combined.

3. Form the Rolls

  1. Place a portion of filling on each cabbage leaf.
  2. Fold sides in and roll tightly into logs.

4. Prepare the Sauce

  1. Heat oil in a large pot.
  2. Sauté onion until soft.
  3. Remove from heat and stir in paprika.
  4. Add crushed tomatoes, tomato paste, and water or broth.
  5. Season with salt and pepper.

5. Cook the Rolls

  1. Place some sauce on the bottom of the pot.
  2. Arrange cabbage rolls in layers.
  3. Add sausage slices between layers (optional).
  4. Pour remaining sauce over the rolls.
  5. Cover and simmer on low heat for 60–90 minutes until tender.

6. Serve

  • Serve hot with a spoonful of sour cream.
