Hungarian Pork and Sauerkraut Goulash (Székely Gulyás) Recipe

Ingredients

  • 600 g pork shoulder (cut into cubes)
  • 1 onion (chopped)
  • 2 tbsp oil or lard
  • 2 tbsp Hungarian paprika
  • 2 cloves garlic (minced)
  • 500 g sauerkraut (drained)
  • 1 tsp caraway seeds
  • 1 tsp salt
  • ½ tsp black pepper
  • 400 ml water or broth
  • 150 g sour cream
  • 1 tbsp flour

Instructions

  1. Heat oil in a pot and sauté chopped onion until soft.
  2. Add garlic and paprika, stir quickly.
  3. Add pork cubes and cook until lightly browned.
  4. Add sauerkraut, caraway seeds, salt, and pepper.
  5. Pour in water or broth and simmer 45–60 minutes until pork is tender.
  6. Mix sour cream with flour and stir into the stew.
  7. Cook 5 more minutes until slightly thick.

Serve hot with bread or dumplings.
