Hungarian green pea soup – Zöldborsóleves

🇭🇺 Hungarian Green Pea Soup (Zöldborsóleves)

Ingredients

  • 2 tbsp oil or butter
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cups green peas (fresh or frozen)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp paprika
  • 1 tbsp flour
  • 5 cups water or broth
  • Optional: 1 bay leaf
  • Optional finish: parsley, a splash of cream, or nokedli

Instructions

  1. Sauté onion in oil/butter until soft.
  2. Add carrots; cook 2–3 minutes.
  3. Stir in paprika and flour; mix well.
  4. Add peas, salt, pepper, bay leaf.
  5. Pour in water/broth; stir.
  6. Simmer 15–20 minutes, until vegetables are tender.
  7. Optional: stir in a splash of cream or add nokedli.
  8. Remove bay leaf, garnish with parsley, and serve.
