Hungarian Green Pea Soup (Zöldborsóleves)

Ingredients

  • 300 g green peas (fresh or frozen)
  • 1 carrot (diced)
  • 1 small onion (chopped)
  • 2 tbsp oil or butter
  • 1 tbsp flour
  • 1 tsp Hungarian paprika
  • 1 tsp sugar
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 L water or broth
  • fresh parsley (chopped)

Optional

  • small pasta (like soup noodles)

Instructions

  1. Heat oil and sauté onion until soft.
  2. Add paprika and stir quickly.
  3. Add peas and carrots, cook 2–3 minutes.
  4. Sprinkle flour and mix well.
  5. Add water or broth slowly while stirring.
  6. Add sugar, salt, and pepper.
  7. Simmer 15–20 minutes until vegetables are tender.
  8. Add small pasta (optional) and cook until done.
  9. Finish with chopped parsley.

Serve warm as a light, comforting soup.
