Flan de Maicena

Ingredients:

  • 1 liter of milk
  • 4 tablespoons of cornstarch (maicena)
  • 5 tablespoons of sugar
  • 1 teaspoon of vanilla extract
  • Optional: caramel for the base

Instructions:

  1. Prepare the Caramel (Optional): If you want a caramel layer at the bottom of the flan, melt sugar in a saucepan until it becomes a golden caramel. Pour it into the bottom of your flan mold.
  2. Mix the Ingredients: In a saucepan, mix the milk, sugar, and vanilla. Dissolve the cornstarch in a little cold milk, then add it to the saucepan.
  3. Cook the Mixture: Cook the mixture over medium heat, stirring constantly until it thickens and comes to a gentle boil. Continue cooking for a few more minutes to fully cook the cornstarch.
  4. Pour and Chill: Pour the mixture into the prepared caramelized mold (if using) or directly into a mold or serving dishes. Allow it to cool to room temperature, then refrigerate for at least a few hours until it sets.
  5. Serve: Once set, you can unmold the flan or serve it directly from the dishes.
