Pörkölt (Hungarian Meat Stew)

Ingredients (serves 4–6):

  • 500 g (1 lb) beef, pork, or chicken, cut into cubes
  • 2 tbsp lard or oil
  • 2 onions, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp sweet Hungarian paprika
  • 1–2 tomatoes, chopped or 1 tbsp tomato paste
  • 1 bell pepper, chopped
  • 1–1.5 cups water or broth
  • Salt and pepper to taste
  • Optional: caraway seeds or hot paprika for extra flavor

Instructions:

  1. Prepare the base:
    • Heat lard or oil in a large pot. Sauté onions until translucent, then add garlic and cook 1 minute.
    • Remove from heat briefly and stir in paprika to avoid burning.
  2. Cook the meat:
    • Add meat cubes and brown lightly on all sides.
  3. Add vegetables and liquid:
    • Stir in tomatoes (or tomato paste) and bell pepper. Add water or broth just enough to cover the meat.
  4. Simmer:
    • Cover and simmer gently for 1–1.5 hours, stirring occasionally, until meat is tender and sauce thickens.
  5. Season and serve:
    • Season with salt, pepper, and optional spices. Serve hot with noodles, potatoes, or bread.
