- Season and sear the chicken:

cottage cheese, Parmesan, garlic, lemon juice, Italian seasoning, paprika, broth/milk, and cornstarch.
Blend until smooth and creamy. - Cook the sauce:
Pour sauce into the same skillet over low heat.
Stir 2โ3 minutes until warm and slightly thick. - Add holiday flavors:
Stir in spinach and sun-dried tomatoes. - Add the chicken back:
Nestle chicken into sauce, spooning sauce over the top. - Simmer:
Cover and cook 8โ10 minutes, or until chicken is fully cooked and sauce thickens. - Serve:
Top with extra Parmesan and black pepper.
