Ingredients
- 500 g Hungarian smoked sausage (kolbĂĄsz), sliced
- 4 medium potatoes, peeled and diced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp sweet Hungarian paprika
- œ tsp hot paprika (optional)
- 1 tsp salt (adjust to taste)
- œ tsp black pepper
- 2 tbsp oil or lard
- 1 cup water or broth
- Fresh parsley for garnish
Instructions
- Sauté the onion
Heat oil or lard in a large skillet or pot.
Add onion and sauté until translucent. Add garlic and sauté 30 seconds. - Add sausage
Stir in sliced kolbĂĄsz and cook 3â5 minutes to release flavor. - Add paprika
Remove pan from heat, stir in paprika quickly (to avoid burning), then return to heat. - Add potatoes and liquid
Add diced potatoes, salt, pepper, and water/broth.
Stir gently, cover, and simmer over medium-low heat 20â25 minutes, or until potatoes are tender. - Finish
Adjust seasoning. Sprinkle with chopped parsley before serving.
