  • 6 eggs, separated
  • ¾ cup (150 g) sugar
  • 1½ cups (180 g) finely ground walnuts
  • ½ cup (60 g) all-purpose flour
  • 1 tsp baking powder
  • Pinch of salt

  • 1 cup (225 g) unsalted butter, softened
  • ¾ cup (90 g) powdered sugar
  • 3 oz (85 g) dark chocolate, melted
  • 1 tsp vanilla extract

Optional Topping

  • Ground walnuts or chocolate glaze

Instructions

  1. Preheat oven to 170°C / 340°F. Grease and line a round cake pan (22 cm / 9 inch).
  2. Beat egg whites with salt until stiff.
  3. Beat yolks with sugar until pale and thick.
  4. Fold walnuts into yolk mixture.
  5. Gently fold in egg whites.
  6. Sift flour and baking powder, fold in carefully.
  7. Pour into pan and bake 35–40 minutes. Cool completely.
  8. Beat butter with powdered sugar until fluffy. Add melted chocolate and vanilla.
  9. Slice cake, fill and frost with buttercream.
  10. Decorate with walnuts or glaze if desired.
