Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 3 large eggs
  • ½ cup vegetable oil (or melted butter)
  • ½ cup milk
  • 1 tsp vanilla extract
  • 2 cups sour cherries (fresh or jarred, well drained)
  • Powdered sugar for dusting

Directions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Whisk flour, baking powder, baking soda, and salt together.
  3. In another bowl, beat eggs and sugar until light and fluffy.
  4. Add oil, milk, and vanilla. Mix well.
  5. Gradually combine with dry ingredients until smooth.
  6. Pour batter into pan and spread evenly.
  7. Scatter sour cherries over the top and gently press them in.
  8. Bake 35–40 minutes, until a toothpick comes out clean.
  9. Cool, dust with powdered sugar, slice, and serve.
