Ingredients

  • 2 lbs (900 g) whole chicken pieces (bone-in)
  • 8 cups cold water
  • 2 carrots, sliced
  • 1 parsley root (or parsnip), sliced
  • 1 small celery root or 1 celery stalk
  • 1 small onion (leave peel on for golden color)
  • 2 cloves garlic
  • 6–8 whole black peppercorns
  • 1 teaspoon salt (or to taste)
  • Fresh parsley

Optional for serving:

  • Fine egg noodles

Directions

  1. Place chicken in a large pot and cover with cold water. Slowly bring to a gentle simmer. Skim off any foam.
  2. Add carrots, parsley root, celery, whole onion, garlic, peppercorns, and salt.
  3. Simmer gently (do not boil) for 1½–2 hours until chicken is tender and broth is clear.
  4. Remove chicken and vegetables. Strain broth if desired.
  5. Cook egg noodles separately and add to serving bowls.
  6. Ladle hot broth over noodles and vegetables. Add pieces of chicken and sprinkle with fresh parsley.
