  • 500 g (4 cups) all-purpose flour
  • 250 g (1 cup + 2 tbsp) unsalted butter, cold and cubed
  • 100 g (½ cup) granulated sugar
  • 7 g (1 packet) instant yeast (or 25 g fresh yeast)
  • 2 egg yolks
  • 150 ml (⅔ cup) warm milk
  • Pinch of salt

For the filling:

  • 300 g (2 cups) ground walnuts
  • 200 g (1 cup) granulated sugar
  • 300 g (1¼ cups) good-quality apricot jam

For the glaze:

  • 150 g (1 cup) dark chocolate
  • 2 tbsp sunflower oil or 30 g (2 tbsp) butter
