Hungarian Semolina Dumpling Soup – Grízgaluska Leves 🇭🇺

Ingredients

For the Soup

  • 6 cups chicken broth or beef broth
  • 2 carrots, sliced
  • 1 parsley root or parsnip, sliced
  • 1 small celery stalk
  • Salt and black pepper to taste
  • Fresh parsley for garnish

For the Semolina Dumplings

  • 1 egg
  • 3 tablespoons semolina (cream of wheat)
  • 1 tablespoon oil or melted butter
  • Pinch of salt

Instructions

  1. Prepare the soup
    Bring the broth to a gentle boil. Add carrots, parsley root, and celery. Simmer until vegetables are tender.
  2. Make the dumpling mixture
    In a bowl, whisk the egg with salt and oil. Stir in semolina and let the mixture rest for 10–15 minutes so the semolina can absorb moisture.
  3. Form the dumplings
    Using a small spoon dipped in broth, scoop small portions of the mixture.
  4. Cook the dumplings
    Drop them gently into the simmering soup. Cover partially and cook for about 10–15 minutes. The dumplings will puff up and become light and fluffy.
  5. Finish and serve
    Taste and adjust seasoning. Sprinkle with fresh parsley before serving.
