🇭🇺 Hungarian Mushroom Soup (Magyaros Gombaleves)

🧾 Ingredients:

  • 400 g mushrooms (sliced)
  • 1 large onion (finely chopped)
  • 2 tbsp butter or oil
  • 1 tbsp sweet Hungarian paprika
  • 1 tsp flour (optional, for thickening)
  • 700 ml vegetable or chicken broth
  • 200 ml milk or cream
  • 1 tbsp soy sauce (optional, for depth)
  • 1 tsp dried dill (or fresh dill if available)
  • Salt and black pepper (to taste)
  • 1–2 tbsp lemon juice (optional, for brightness)

👩‍🍳 Instructions:

  1. Heat butter in a pot and sauté the onion until soft and golden.
  2. Add sliced mushrooms and cook until they release their juices and soften.
  3. Remove from heat, stir in paprika quickly so it doesn’t burn.
  4. Sprinkle in flour (if using), stir well.
  5. Pour in broth, then season with salt, pepper, and dill.
  6. Simmer for 10–15 minutes to blend flavors.
  7. Add milk or cream and mix well (do not boil hard after adding cream).
  8. Finish with soy sauce and a squeeze of lemon juice if desired.
