
Ingredients:
- 250 g all-purpose flour
- 2 eggs
- 500 ml milk
- 200 ml sparkling water (or regular water)
- A pinch of salt
- 1 tbsp sugar (optional, for sweet version)
- 1 tbsp oil or melted butter (plus extra for frying)

Instructions:
- In a bowl, whisk together eggs, milk, water, salt, and sugar (if using).
- Gradually add flour while whisking until you get a smooth, thin batter.
- Stir in the oil or melted butter. Let the batter rest for 15–20 minutes.
- Heat a lightly oiled pan over medium heat.
- Pour a small amount of batter into the pan and swirl to coat thinly.
- Cook for about 1–2 minutes until lightly golden, then flip and cook the other side.
- Stack the pancakes and fill as desired (jam, chocolate spread, sweet cheese, etc.).
- Roll or fold and serve warm.
