  • 500 g all-purpose flour
  • 250 g butter (soft)
  • 200 ml milk (warm)
  • 10 g dry yeast
  • 50 g sugar
  • 2 egg yolks
  • pinch of salt

Filling

  • 300 g ground walnuts
  • 150 g sugar
  • 100 ml milk
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • lemon zest (optional)

Top

  • 1 egg (for brushing)
  • powdered sugar (optional)

Instructions

  1. Mix yeast with warm milk and a little sugar, let sit 10 minutes.
  2. In a bowl combine flour, butter, sugar, salt, egg yolks, and yeast mixture.
  3. Knead into a soft dough and let rise 1 hour.
  4. For filling, heat milk with sugar, then mix with walnuts, cinnamon, vanilla, and zest. Let cool.
  5. Roll dough into a rectangle and spread filling evenly.
  6. Roll tightly into a log and cut into smaller rolls or leave as one long roll.
  7. Place on baking tray, brush with egg.
  8. Bake at 180°C (350°F) for 25–30 minutes until golden.
