Hungarian Goulash (Gulyás)

Ingredients

  • 600 g beef (chuck, cut into cubes)
  • 2 onions (chopped)
  • 3 tbsp oil or lard
  • 2 tbsp Hungarian paprika
  • 2 cloves garlic (minced)
  • 2 carrots (sliced)
  • 2 potatoes (cubed)
  • 1 tomato (chopped) or 1 tbsp tomato paste
  • 1 bell pepper (chopped)
  • 1 tsp caraway seeds
  • 1 tsp salt
  • ½ tsp black pepper
  • 1–1.2 L water or beef broth

Instructions

  1. Heat oil and sauté onions until soft.
  2. Add paprika and stir quickly (do not burn).
  3. Add beef cubes and cook until slightly browned.
  4. Add garlic, tomato, bell pepper, caraway seeds, salt, and pepper.
  5. Pour in water or broth and simmer 60–90 minutes.
  6. Add carrots and potatoes.
  7. Cook another 20–30 minutes until vegetables are tender.
