Hungarian Paprika Potatoes (Paprikás Krumpli)

Ingredients

  • 1–2 cloves garlic, minced (optional)
  • 1–2 tomatoes, chopped (or 1 tbsp tomato paste)
  • 1 green bell pepper, chopped (optional)
  • Salt and pepper to taste
  • 500 ml water or broth
  • Sour cream, for serving (optional)

Instructions

  1. Sauté onion
    Heat oil in a pot over medium heat.
    Add onions and garlic, cook until soft and translucent.
  2. Add paprika
    Remove from heat briefly, stir in paprika quickly to avoid burning.
  3. Add vegetables
    Add chopped tomatoes and bell pepper, sauté 2–3 minutes.
  4. Add potatoes and liquid
    Add diced potatoes, salt, pepper, and enough water or broth to just cover.
    Bring to a boil, then reduce heat and simmer for 20–25 minutes, until potatoes are tender.
  5. Finish
