Ingredients

  • 5โ€“6 bell peppers (any color)
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 cup diced tomatoes (canned or fresh)
  • 1 tsp paprika
  • ยฝ tsp cumin or Italian seasoning
  • Salt & black pepper, to taste
  • 1ยฝ cups shredded cheese (cheddar, mozzarella, or mix)
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC). Lightly grease a baking dish.
  2. Cut tops off peppers, remove seeds, and arrange peppers upright in the dish.
  3. Heat olive oil in a skillet. Add onion and garlic; cook until soft.
  4. Add ground beef and cook until browned. Season with salt, pepper, paprika, and cumin.
  5. Stir in cooked rice and diced tomatoes. Cook 2โ€“3 minutes.
  6. Spoon beef mixture into peppers.
  7. Top each pepper generously with shredded cheese.
  8. Cover loosely with foil and bake 30 minutes.
  9. Uncover and bake 10โ€“15 minutes until peppers are tender and cheese is melted and golden.
  10. Garnish with parsley and serve hot.
